Summer is so close I can taste it! Literally. On this week’s menu, a few meals to ring in the summer and warm weather. Memorial Day Weekend, to me, is the start of summer! On the menu this week:

Slow cooker to the rescue again. I am giving you my favorite way to eat tacos, and of course, super easy with less than 5 minutes prep time. Use this meal for your “go-to” on your busy night this week. It yields 2lbs of meat, so many of you will have leftovers! Paleo and GF.
The Garden Vegetable Pasta is the Meatless Monday recipe for the week. Or Meatless Thursday or Friday, because around here, we don’t follow a strict rule schedule. I have added a way to make this kid friendly, or picky-eater friendly (yes, I’m talking to you vegetable hating husbands). Click on the recipe for a simple way to adapt this and make your kids highly likely to love it and eat their veggies!
The Sticky Honey and Ginger Chicken is both Paleo and GF. Best served with a salad or rice if that’s your thing. It also is complete in less than 30 minutes.
I’ve saved the Grilled Ribs to ring in the summer for this Memorial Day weekend. Is it ironic that I am hoping you celebrate the American Holiday weekend with a Germany Potato Salad? I hope you try the potato salad. It’s a much lighter version of typical potato salad, and much much tastier (I’m biased). The ribs are delicious and the one meal my husband makes. They are a favorite with my kids too. They do require a rib rub that should be made the night or morning of, so be mindful about the preparation. Plenty of leftovers with this one also!
