Happy Father’s day and Summer Solstice!! It’s a great day to BBQ! Maybe your grilling the Asian Chicken from last week, or maybe you need a last minute idea on what to grill for your dad or husband? Guinness Beef Burgers are perfect for the special day! Here is what I have on this week’s menu:
A few notes for the week:
-The Thai Lemon Curry Chicken Bowls with Zoodles are both GF and Paleo. However, if you are skeptical of zoodles (zucchini noodles), you can use pasta instead. My kids tried it for the first time last month, and thought they were super cool. You can mix both the pasta and zoodles to test it out with your family (pairing familiar foods with unfamiliar is how I get my kids to try things for the first time). This recipe is also a good one to make after one of the grilled recipes (chicken or burgers). Just throw on a few extra chicken breasts, stick them in the fridge, and you can use them for this dinner later in the week. Otherwise, follow the recipe as planned by using the skillet to cook the chicken.
-I love love love a good burger. It’s summer time after all, and it’s a perfect weekend food! It’s so yummy and is definitely a crowd pleaser. My gluten-free friends will have to omit the Guinness in this recipe and have a boring burger (j/k this burger can still be tasty without the Guinness).
-The Red Pepper Pasta is the vegetarian meal for the week and is also Vegan. This one is a favorite with my kids. They love pasta (most kids do), and it’s a great way to add fresh veggies into their day without any complaints. The sauce comes together with only 4 ingredients! Super simple, but does require about 20 minutes in the oven.
-Grilled Rosemary and Balsamic Chicken is also a crowd pleaser, very simple, and my all-time favorite chicken marinade. Whip it up early in the morning, and you’ll have very little to worry about during dinner time. This recipe contains brown sugar so is not Paleo friendly, but a honey substitute is fine. I prefer the brown sugar in this one, just being honest.
