A recipe round-up of simple and delicious Whole 30 approved lunch recipes!
I have several friends who are doing the Whole 30 challenge, and one of their common complaints: lunch.
I get it, you have to be on your game and really prep things in advance for this to be a success!! Not everyone is at home all day and able to spend hours in the kitchen. Going out to your favorite restaurant also isn’t really an option. So, I’ve created a list of some simple lunch items that you can prep in advance (or some that take less than 5 minutes to pull together), and they can last you for several lunches during the week.
If you happen to be sharing with your spouse, you may just want to double some of the recipes! Pick 1 or two to make throughout the week, and use the list for the whole month! You will notice that I have included several Vegan options. I have just a general rule of thumb about eating too many animal proteins throughout the day. I think it’s very important to not always eat animal proteins with every meal. And, I just love a plate full of vegetables! Enjoy!
