This recipe round-up has 10 EASY and HEALTHY recipes for the lunchbox! I’m super excited about this list for a few reasons. This is my first year sending my kids to school after homeschooling them for a few years. This whole lunchbox thing is new territory for both me and my kids. They have been used to healthy cooked meals for lunch, and let’s just say we’re having to get creative around here to keep them from being bored. They like variety.
And you know what I like? Easy.
I want to be sure my kids have healthy homemade food that is not full of processed junk. And I don’t want it to break the bank. I could easily go to my local Whole Foods and spend $20 on a box of organic applesauce or fruit leathers, but really?!?! So I need to be practical about affordable and healthy snacks that are simple to make. Each week I have tried a few new snacks, or dips to add to their lunchbox. Some didn’t work out as well (and are not included on this list!) Here is the list of foods that we have done so far with great success:
Chewy Chocolate Cherry Almond Granola Bars
Peanut Butter and Honey Banana Muffins
Protein Packed Avocado Ranch Dip
Dark Chocolate Almond Brownie Energy Bites
These recipes include some of my own, and other bloggers. Healthy breakfast items such as muffins, are also a great idea for lunch boxes. I usually make a batch of muffins on the weekends, and we are able to use them for a few breakfasts during the week, and at least 1 lunch! I love to use hummus in a whole wheat tortilla as a hummus wrap in place of a traditional sandwich; this is always a huge hit with my kids. And don’t forget about leftover dinner! I recently threw together my Thai Peanut Chicken Pasta Salad as a main dish in my kids’ lunch box.
