Ground Turkey Taco Bowl

These simple Ground Turkey Taco Bowls come together with Cauliflower Spanish Rice and all of your favorite taco toppings! A wonderful and nutritious way to enjoy your tacos. Grain-free, Paleo, and Whole30 approved!

Ingredients

For the Turkey Tacos: – 2 tbsp avocado or olive oil – 1.5 lbs ground turkey or beef – 1/3 cup chopped white onion – 1 tbsp chili powder – 3 tsp cumin – 2 tsp ground coriander – 1 tsp paprika – 2 tsp minced garlic – 1 tsp oregano – 1 tsp salt – 1 tsp chipotle powder optional – 3 tbsp tomato paste – 1/4 cup apple cider vinegar – 1/2 cup chicken broth may need an additional 1/4 cup For the Cauliflower Rice: – 1 large head of cauliflower* – 1 tbsp olive oil or avocado oil – ½ cup diced onion – 3 cloves garlic minced – 1 tsp cumin – 1 tsp salt + more to taste – 2 tbsp tomato paste – ¼ – ½ cup chicken or vegetable broth – Fresh cilantro for garnish optional

You can make the cauliflower rice while the taco meat is cooking, or cook the cauliflower rice ahead of time.

Heat a large skillet to medium heat. Once hot, add oil and onion.
