Here is what I’m cooking for dinner this week:
A few notes about this week’s plan, and maybe some hints to make your life a little easier:
-I will generally have plenty of leftovers with some of these meals. For this week it’s the enchiladas and slow cooker soup. That will cover you for 6 nights of this week. You can also easily double one of the other 2 recipes.
-The most time consuming meal is the Roasted Vegetable Enchiladas. It does take a little prep time to roast the vegetables, but it’s still a simple meal! I plan these types of meals on Sundays and use the leftovers for Mondays.
-If you make the Grilled chicken earlier in the week, throw on a few extra chicken breasts to use later in the week for Chicken and Vegetable Curry. You can make that meal in less than 20 minutes with that little shortcut!
-If you have anyone in your family who does not like soup for dinner (I’ve heard these people exist), I have posted an adaptation in the slow cooker recipe.
-Also note that these recipes will serve 4 people (or 2 adults and 2-3 children). For teenagers you’ll need to quadruple 😉
