Hi there! It’s a busy few weeks for our family as we prepare a big move from Europe back to the US. I kind of hate moving. I’m not sure I know of anyone who enjoys it, but I will be sooooo glad when this is all over. In the meantime, I am cooking up a few meals this week that are fast and easy. I know I say that all the time, but these are truly very simple meals this week. Maybe you have a busy week ahead as well. For some of you, your kids are fresh out of school for the summer, and your adjusting to the changes around the house. I hope I can make it easier for you this week! Here is what’s on the menu:
Grilled Asian Orange Chicken serve with rice and vegetables, or in a salad
-Normally I tell you which meal will take you the longest so you can prepare ahead of time. Well, this week, they are all less than 20 minutes prep time. The Pulled Pork takes all day to cook, but is thrown together with a quick sauce and salad that isn’t time consuming.
-The Avocado Chicken Salad with Bacon is super duper easy. I suggest you make that after the Grilled Orange Asian Chicken. Why? Because you can throw on a few extra chicken breasts with the Grilled Chicken and then already have your chicken on hand for the Chicken Salad on another day. Rotisserie chicken would also work well for this recipe. This salad is meant to be served in a sandwich or as wrap and can be served at room temperature, or even chilled. This is also a perfect dish if you’re out and about this week! Maybe spending an evening at your neighborhood pool? Pack this one in your cooler!
-The Black Bean and Rice Bowls are your meatless meal for the week. If you are one of those that must have meat, you can use some leftover pulled pork or chicken from the grill.
-The Grilled Orange Asian chicken is simple to grill and marinate, but is best when marinated for at least 5 hours.
-All recipes are GF friendly (use Tamari Brand Soy Sauce). They are also Paleo with the exception of the meatless dinner. Enjoy!
