Hi there! Hope you all enjoyed your 4th of July celebrations, I know my family had a blast! We’re in the midst of some HOT HOT weather this week; so I’ve created a menu that is perfect for a hot summer week. Here is what’s cooking this week:

Slow Cooker Peanut Butter Chicken serve with rice and roasted veggies
A few notes about this week’s dinners:
-The slow cooker is back!!!! I don’t use my slow cooker all that much in the summer, but now that I’m back in America with air conditioning and a busy schedule, we need it this week. This recipe is sooooo easy. Less than 5 minutes prep time. Bonus, this is my kids’ favorite slow cooker dinner. They love Peanut Butter chicken! It may sound a little strange, but just trust me on this one. A HUGE family hit! Recipe is not Paleo because of the PB, but you could switch with cashew butter or almond butter. Recipe is gluten-free!
-The Blackened Fish Taco recipe is not mine, and if you read my about page you would know we don’t eat fish (because you know, I’m “allergic”). However, a good friend of mine told me she is obsessed with this recipe. I have also had a few requests for some fish recipes since they were popular when I was on vacation. I love recipes from Host the Toast blog, so I’m sure it will be a hit. Everything is delicious! Recipe is Gluten-Free with corn tortillas, and can be made Paleo-friendly without the tortillas.
-Real Spanish Gazpacho is my personal favorite this week. It was inspired by a trip I took to Southern Spain where I learned what the secret ingredient is with “Real” Gazpacho. I love to pair it with the Tabbouleh Salad for the extra veggies and whole grains (not to mention the high protein in a bulgur salad). This dinner is perfect for a night outside! The Gazpacho is a refreshing summer treat. Since both dishes are served cold, it also makes a great dinner to pack if you’re headed to the pool one evening or having a picnic. They both are even more delicious when made ahead of time!
-Grilled Cajun Chicken Sandwiches are also a simple and easy to prepare dinner that requires very little prep time. Omit the bread, and have the grilled chicken with the Grilled Sweet Potato Salad for a Paleo or Gluten-Free option.
