GRILL GRILL GRILL!!! That is the theme this week, and lots of vegetables this week! Summer is the best time of year for produce, and I am taking advantage of my local farmer’s market for these fabulous summer dishes!

A few notes about this week’s recipes:
-ALL recipes are Gluten-Free!! No adaptations required. 3 of the recipes are Paleo, the only one that is not is the Eggplant Parmesan (because of the cheese).
-Even though we are using the grill, EVERY recipe can be done in less than 30 minutes. The eggplant recipe is probably going to be the most complicated, but still can be made quickly if you plan it out well.
-The recipes are all for only 1 night, if you want leftovers, you can easily double any of them. The eggplant recipe may have some leftovers for a second night.
-My kids’ favorite meal of the week is the Orange Chicken and Broccoli Stir-fry. The Grilled Chicken and Blackberry Salad has a kid friendly option that my kids also loved!
