Ingredients

  • 2 lbs chicken breast or chicken thighs
  • 2 tsp smoked paprika
  • 1 tsp chipotle chili powder
  • 1.5 cups BBQ Sauce divided
  • 2/3 cup Beer* (or chicken broth)
  • 1/2 cup ranch dressing
  • 1/4 cup freshly chopped cilantro for serving
  • 1/3 cup diced red onion for serving
  • 2 cups chopped fresh cabbage for serving

Instructions

  1. In the Instant Pot, combine chicken, paprika, chipotle chili powder, 1/2 cup BBQ sauce, and beer. Give it a stir and secure the lid.

  2. Cook at high pressure for 8 minutes, use a quick release. Once steam is completely released, remove chicken from the pot and shred with a fork. Place chicken back into the pot. If the sauce is really thin, add in 1 tbsp arrowroot starch.

  3. In a bowl, stir together remaining 1 cup BBQ sauce and the ranch dressing. Pour on top of the chicken and stir.

  4. Serve hot in a bowl of greens with toppings: cilantro, onion, cabbage. Or serve in bun as a sandwich with toppings.

Recipe Notes

*I use a lager beer for this recipe. A darker beer will provide a bit more flavor. You can also use chicken broth in it's place.
