Berry Caprese Salad

This fresh and delicious Berry Caprese Salad is layers of flavor! You'll love how festive this salad is, and that you can toss it together in 10 minutes!

Ingredients

  • 4 cups Arugula
  • 1 tbsp Avocado oil or olive oil
  • 2 tbsp Lemon juice
  • 1/2 tsp Sea salt
  • 2 cups Blueberries
  • 2 cups Raspberries
  • 8 oz Mozzarella balls
  • 2 tbsp Chopped fresh basil
  • 2 tbsp Chopped fresh mint
  • Balsamic glaze*
  • 1/3 cup Toasted pine nuts
  • 8 slices Prosciutto (optional)

Instructions

  1. On a large platter, spread out the arugula. Toss with oil, lemon juice, and sea salt.

  2. Top with berries, mozzarella, and fresh herbs. Drizzle with balsamic glaze, I probably drizzled at least 2 tbsp, a little does go far here. But, add as much as you'd like!

  3. Add the optional pine nuts and prosciutto. Dig in!!

Recipe Notes

*Balsamic glaze is a thickened syrup that is naturally sweetened and can be found in most grocery stores. I buy mine from Trader Joes, but it's also simple to make! You can heat a saucepan with balsamic vinegar and honey or maple syrup. Bring to a gentle boil and reduce heat. Let simmer until thickened, about 5 minutes. Cool completely and store.
