Black Bean and Rice Bowls with Creamy Avocado Sauce

Ingredients

  • 4 cups of cooked rice*
  • 2 cups black beans
  • 1 cup chopped tomato
  • 1/2 cup chopped green onion
  • 2 cups corn kernels
  • 1 cup chopped fresh cilantro
  • 1 cup pepitas pumpkin seeds
  • For the dressing:
  • 1 avocado
  • 2 cloves of garlic
  • 2 tbsp apple cider vinegar
  • ½ cup olive oil
  • ¼ cup pepitas pumpkin seeds
  • 1 tsp cumin
  • ¼ cup lime juice
  • ¼ cup chopped fresh cilantro
  • ½ cup water
  • 1 tsp salt

Instructions

  1. Create individual bowls, by beginning with 1 cup rice, 1/2 cup beans, tomato, green onion, 1/2 cup corn, fresh cilantro, then pumpkin seeds.

  2. For the dressing: combine all ingredients into a food processor or blender, and pulse until nice and smooth.
  3. Complete your bowl by drizzling your creamy avocado sauce on top.

Recipe Notes

Use Cauliflower Spanish Rice or Easy Spanish Rice for options with the rice portion of the bowls.
