Peach, Blackberry, and Avocado Salad

Ingredients

For the salad:

  • 4 cups arugula
  • 2 large peaches, sliced
  • 2 large avocados, sliced
  • 3/4 cup blackberries
  • 1/4 cup fresh mint leaves
  • 1/4 cup toasted pine nuts
  • 1 tsp red chili pepper flakes (optional)

For the dressing:

  • 1/4 cup avocado oil or olive oil
  • 3 tbsp fresh lime juice
  • 1 tbsp red or white wine vinegar
  • 2 tsp raw honey
  • 1/2 tsp sea salt
  • pinch black pepper

Instructions

  1. Assemble your salad. In a large serving plate, place arugula on the bottom. Top with peach slices, avocado slices, blackberries, mint leaves, and pine nuts. Sprinkle with chili pepper (if using).

  2. Whisk together your dressing: in a small bowl whisk together oil, lime juice, vinegar, honey, salt, and pepper. You can also place in a small jar with a lid and shake. 

  3. Drizzle dressing over salad, and lightly toss. Serve immediately.
