Prepare the onion rings by first lining a large baking sheet with parchment paper and set aside.
Slice the onion: being by slicing the ends off the onion. Peel off the outer layer. Now slice into 3/4 inch - 1 inch slices. Pull apart the individual rings. Pat dry if they are wet.
In a shallow bowl, whisk together both eggs. In another shallow bowl, stir together almond flour, Italian seasoning, paprika, garlic powder, and sea salt.
Dip each onion ring in the egg mixture first, then the flour mixture. Ensure to get the insides of each ring. Also, wipe your hands or use tongs after dipping each onion ring in order to prevent the flour mixture from falling off. Transfer the pan to the fridge and let sit for at least 30 minutes. This helps to keep the coating on the onions.
When ready to cook, preheat the air fryer at 380 for about 5 minutes. Then add the onion rings, it's okay to stack some of the rings, and cook for 6 minutes. Open the air fryer and spray with the avocado oil or olive oil. Cook for another 3-4 minutes, or until nice and crispy. Serve hot with your choice of sauce.
