Avocado Pesto

Ingredients

  • 1.5 cups loose basil leaves
  • 1 avocado skin and seed removed
  • 3 cloves garlic crushed
  • 1/4 cup olive oil
  • 3 tbsp pumpkin seeds
  • 1/4 cup water
  • Juice of 1 lemon
  • 1 tsp sea salt plus more to taste

Instructions

  • Place basil, avocado, garlic, olive oil, pumpkin seeds, salt, and lemon into a food processor or blender. Blend until smooth, add water while motor is running.
  • Add more salt to taste if needed.
