Start by preheating your oven to 400°F. Dice the potatoes into small, even cubes so they cook quickly and evenly. Toss them with olive oil, salt, garlic powder, and pepper, then spread them in a single layer in a 9×13 casserole dish. Roast for about 25 minutes, or until fork-tender and lightly golden.
While the potatoes are roasting, cook the ground beef in a large skillet over medium heat. Break it apart as it cooks until browned and fully cooked through. Add the diced onion, garlic, bell pepper, and sauté for a few minutes until softened. If needed, carefully drain any excess grease.
In a small bowl, whisk together the Greek yogurt, ketchup, mustard, Worcestershire sauce, and seasonings. This simple sauce gives the casserole that classic cheeseburger flavor while keeping it lighter and still creamy.
Once the potatoes are done roasting, remove them from the oven and reduce the temperature to 375°F. Sprinkle shredded cheddar cheese evenly over the top of the casserole. Return the dish to the oven and bake for 10–15 minutes, or until the cheese is melted and bubbly. For a slightly golden top, you can broil for 2–3 minutes at the end.
Let the casserole rest for a few minutes before serving. For a more cheeseburger feel, top with pickles, diced tomatoes, or shredded lettuce. You can even drizzle a little extra sauce on top for that classic cheeseburger flavor in every bite.
