Gingerbread Baked Oatmeal

Less than 10 minutes of prep time and one bowl is all you need to make this wholesome and hearty Gingerbread Baked Oatmeal! The best make ahead breakfast to enjoy during the holidays.

Ingredients

  • 2 cups Milk*
  • 2 large Eggs
  • 1/4 cup Molasses
  • 1/4 cup Real maple syrup
  • 1/2 cup Applesauce
  • 2 tbsp Melted butter
  • 2.5 cups Rolled Old Fashioned Oats
  • 1 tsp Baking powder
  • 1 tsp Cinnamon
  • 1/2 tsp Ground ginger
  • 1/4 tsp Ground cloves
  • 1/4 tsp Sea salt
  • 1 large Apple, diced

Instructions

  • Preheat the oven to 375 degrees. Prepare a 9x9 or 8x8 baking dish by lightly greasing.
  • In a large bowl, whisk the eggs and milk, molasses, syrup, applesauce, and melted butter.
  • Now add in the dry ingredients: rolled oats, baking powder, spices, and salt.
  • Stir to combine, then fold in apples and pecans. Pour the mixture in the prepared baking dish. You can also add additional sliced apples on top.
  • Bake for 35 minutes, or until top is golden and oatmeal feels firm. Remove from oven and let sit for at least 10 minutes before slicing.

Notes

*Any kind of milk works in this recipe to include dairy-free milk!
