Preheat your oven to 350 degrees. Lightly grease an 8 inch or 9 inch square dish.
Begin by placing peaches, vanilla extract, lemon juice, maple syrup, and 1/2 tsp cinnamon in a saucepan. Heat to medium high. Let the mixture simmer while the peaches begin to soften. Cook for approximately 5 minutes, or until liquid begins to thicken. Remove from heat and set aside.
Now make your crumb topping: add walnuts, coconut, 1/2 tsp cinnamon, coconut sugar, and oil or ghee to a food processor. Blend until crumbly.
Place peach mixture at the bottom of your dish. Evenly top with the crumb topping.
Bake for approximately 18-20 minutes, or until top is nice and golden.
Remove from heat and serve warm.
