Green Goddess Dressing
This Dairy-Free Green Goddess Dressing is made with fresh herbs and avocado for a creamy base. 10 minutes and a food processor or blender is all you need!

- 1 large ripe avocado
- 1/4 cup lemon juice
- 1 cup chopped fresh parsley
- 1/2 cup chopped fresh basil
- 1/3 cup chopped fresh chives
- 1 tbsp dijon mustard
- 2 tbsp capers (drained)
- 1/3 cup water
- 1 garlic clove (chopped)
- 1/4 tsp sea salt
- 1/2 cup avocado oil or olive oil
In a food processor or blender, combine avocado, lemon juice, fresh herbs, dijon mustard, capers, water, garlic, and salt. While motor is running pour in avocado oil or olive oil.
Continue to blend until smooth and creamy. You may need to pause and scrape the sides of the bowl with a spatula. Add in additional water by the tablespoon if dressing is too thick.
Store in an air tight container in the fridge for up to 4 days.
