Grilled Cajun Chicken Burgers

Ingredients

  • 2 tbsp chili powder
  • 2 tbsp paprika
  • 2 tbsp coarse sea salt
  • 1 tbsp onion powder
  • 1 tbsp garlic powder
  • 1 tbsp dried thyme
  • 1 tbsp oregano
  • 2 tbsp cumin
  • 2 tsp dried corriander
  • 1 tsp cayenne pepper optional
  • 2 tbsp lemon juice
  • 1 tsp liquid smoke
  • 4 large chicken breasts
  • 6 kaiser rolls or any sandwich bun
  • Sliced red onion
  • Sliced tomatoes
  • Lettuce

Instructions

  • Begin by whisking together the dry rub: start from chili powder all the way down to the cayenne pepper. Set aside.
  • Prepare your chicken breasts: if your pieces are long, you may want to cut in half so that it fits on your bread. Mix together lemon and liquid smoke, and lightly brush all sides of the chicken. Rub each chicken breast with the spice mix generously and be sure to get all sides. You can do this hours ahead, or up to only 15 minutes prior to placing on the grill.
  • Prepare your grill.
  • Grill for approximately 8 minutes per side or until internal temperature reaches 160.
  • Serve immediately on a toasted kaiser roll or bun with your favorite toppings.
