Ingredients

For the Burger Bowls:

  • 20 oz frozen regular or sweet potato fries
  • 1.5 lbs lean ground beef
  • 2 tbsp Worcestershire sauce
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp sea salt
  • 1 cup shredded cheddar cheese
  • 2 cups shredded iceberg or romaine lettuce
  • 1/2 cup sliced cherry tomatoes
  • 1/2 medium red onion (sliced)
  • 1/2 cup dill pickle slices

For the Special Sauce:

  • 1 cup cottage cheese (whole milk or low fat)
  • 3 tbsp ketchup
  • 1 tbsp yellow mustard or dijon mustard
  • 1 tbsp pickle juice
  • 1 tbsp Worcestershire sauce

Instructions

  • Cook the fries according to package directions: oven or air fryer both work here! Spread in a single layer on a sheet pan and do not overcrowd.
  • Cook and season the beef while the fries cook. Heat a large skillet over medium high heat. Add the beef and cook, breaking into small crumbles with a wooden spoon for about 6 - 8 fomites Drain any excess fat. Season with garlic powder, onion powder, salt and Worcestershire sauce. Cook for another minute. You can also sprinkle the cheddar cheese on top at this point for a melted cheese variation.
  • Make the cottage cheese special sauce: add the cottage cheese, ketchup mustard, pickle juice, and Worcestershire sauce to a food processor or blender. Blend for about 1 minute until smooth and creamy.
  • Build the bowls: divide the hot and crispy fries into 4 equal bowls. Top each bowl with ground beef and cheese. Add the lettuce, tomato, onion, and dill pickle slices.
  • Drizzle the cottage cheese special sauce generously over each bowl.

Notes

For the cottage cheese sauce: I typically keep a container of already whipped cottage cheese in my fridge. This means I just mix in the other ingredients. You can whip the cottage cheese separately, and then just add the other ingredients if you want to try this!
Make it lower carb: Swap the fries for a lettuce base or cauliflower rice for a lighter version that is just as satisfying.
Drain the beef well: After browning the ground beef, drain any excess fat before seasoning. This keeps the bowl from getting greasy and lets the cottage cheese sauce shine.
Meal prep friendly: Cook the ground beef and make the sauce ahead and store separately in the fridge for up to 4 days. Cook the fries fresh when ready to serve for maximum crispiness.
Cheese tip: Add the shredded cheddar directly over the hot beef crumbles so it melts slightly before assembling the bowl — so good!
