Watermelon Mojitos

Enjoy some beautiful weather and the best day with a Watermelon Mojito in hand! This pitcher of mojitos is lightened up with very little sugar, yet is still perfectly sweetened, refreshing, and everything you want in a cocktail. Looking for a mocktail? You can omit the alcohol and still enjoy!

Ingredients

  • 8 cups cubed watermelon*
  • 1/2 cup fresh mint leaves + more for garnish
  • 1/2 cup fresh lime juice
  • 1 cup white rum
  • 1 cup Seltzer water**
  • lime wedges for garnish

Instructions

  • Prepare the watermelon, by chilling the watermelon cubes for at least an hour. Place inside a blender and blend until smooth and no chunks remain.
  • In the bottom of a large pitcher, muddle the mint using a wooden spoon (or muddling tool). Fill the pitcher halfway with ice.
  • Pour in the watermelon juice, lime juice, and rum. Give the mixture a good stir. Top with seltzer water.
  • Pour into individual glasses and garnish with mint and limes.

Notes

*You will need a medium sized watermelon to get 8 cups cubed. 
**Use tonic water if looking for a sweeter cocktail.
