Apple Maple Pecan Energy Bites

Apple Maple Pecan Energy Bites are simple to make in less than 15 minutes and only 6 ingredients! This delicious on-the-go snack or lunchbox item tastes like a mini pecan pie but with good for you ingredients. Packed with healthy fats, fiber, and protein with no refined sugar!

Ingredients

  • 2 cups dried apples*
  • 2 cups pitted medjool dates about 10 large dates
  • 2 cups pecan pieces
  • 1/2 cup hemp hearts hemp seeds
  • 3 tbsp real maple syrup
  • 2 tsp cinnamon

Instructions

  • Place all ingredients into a large food processor. Pulse until pecans are completely chopped, and batter is sticky and begins to clump together. Scrape along the sides with a rubber spatula, and continue to pulse if needed to ensure mixture is well blended.
  • Roll mixture into 1-inch balls.
  • Place inside a sealed container and store in the refrigerator, or dry dark place.

Notes

Do not used freeze dried apples, use real dried apples. I find mine at Trader Joe's.
