Black Bean and Rice Bowls with Creamy Avocado Sauce

A delicious, healthy, and simple Mexican inspired vegan dinner that is packed with veggies, protein, and healthy fats! These Black Bean and Rice Bowls are topped with a Creamy Avocado Dressing.

Ingredients

  • 4 cups of cooked rice*
  • 2 cups black beans
  • 1 cup chopped tomato
  • 1/2 cup chopped green onion
  • 2 cups corn kernels
  • 1 cup chopped fresh cilantro
  • 1 cup pepitas pumpkin seeds
  • For the dressing:
  • 1 avocado
  • 2 cloves of garlic
  • 2 tbsp apple cider vinegar
  • ½ cup olive oil
  • ¼ cup pepitas pumpkin seeds
  • 1 tsp cumin
  • ¼ cup lime juice
  • ¼ cup chopped fresh cilantro
  • ½ cup water
  • 1 tsp salt

Instructions

  • Create individual bowls, by beginning with 1 cup rice, 1/2 cup beans, tomato, green onion, 1/2 cup corn, fresh cilantro, then pumpkin seeds.
  • For the dressing: combine all ingredients into a food processor or blender, and pulse until nice and smooth.
  • Complete your bowl by drizzling your creamy avocado sauce on top.

Notes

Use Cauliflower Spanish Rice or Easy Spanish Rice for options with the rice portion of the bowls.
