A delicious, healthy, and simple Mexican inspired vegan dinner that is packed with veggies, protein, and healthy fats! These Black Bean and Rice Bowls are topped with a Creamy Avocado Dressing.
This bowl of goodness combines rice, black beans, corn, tomatoes, green onions, cilantro, your favorite greens, pepitas (pumpkin seeds) and finished with a delicious creamy avocado dressing. You can mix up the flavors here, and perhaps do more of a buffet style dinner to allow your family to choose their own toppings.
I start off by filling my bowl with a cup of rice, top with 1/2 cup black beans, and then pile on the rest before drizzling with the creamy avocado sauce. The rice I used in this recipe is either my Easy Spanish Rice, or my Cauliflower Spanish Rice but feel free to use your favorite. Quinoa would also work well in this bowl. To make the avocado sauce, you’ll combine your ingredients into a food processor and pulse until smooth:
The creamy avocado sauce is a combination of avocados, limes, pepitas, cilantro, garlic, and vinegar. It makes this entire dish come together and is so darn tasty you’ll be licking the bowl clean! Not only that, but the dressing is full of antioxidants and healthy nutrients including: omega 3’s, vitamin E, zinc, iron, folate, fiber, and the list goes on. You’ll have some extra sauce leftover, and will be grateful! This dressing will only be kept fresh for a few days, but I’m sure it won’t last that long 😉
The whole dish comes together in less than 20 minutes and requires very little prep time or thought. My kids love this one because they participate in building their own personalized bowl to their taste. Enjoy!

Black Bean and Rice Bowls with Creamy Avocado Sauce

Ingredients
- 4 cups of cooked rice*
- 2 cups black beans
- 1 cup chopped tomato
- 1/2 cup chopped green onion
- 2 cups corn kernels
- 1 cup chopped fresh cilantro
- 1 cup pepitas pumpkin seeds
- For the dressing:
- 1 avocado
- 2 cloves of garlic
- 2 tbsp apple cider vinegar
- ½ cup olive oil
- ¼ cup pepitas pumpkin seeds
- 1 tsp cumin
- ¼ cup lime juice
- ¼ cup chopped fresh cilantro
- ½ cup water
- 1 tsp salt
Instructions

Create individual bowls, by beginning with 1 cup rice, 1/2 cup beans, tomato, green onion, 1/2 cup corn, fresh cilantro, then pumpkin seeds.

For the dressing: combine all ingredients into a food processor or blender, and pulse until nice and smooth.

Complete your bowl by drizzling your creamy avocado sauce on top.
Recipe Notes
Use Cauliflower Spanish Rice or Easy Spanish Rice for options with the rice portion of the bowls.
