No shaping individual patties, no dredging one at a time… just spread, bake, and cut into squares that fit right on a slider bun.

Now that football is in full swing, this has become my go-to for game day! Everything can be made ahead and refrigerated until it’s time to bake, which means less time in the kitchen and more time actually watching the game. Buffalo chicken flavored recipes are my absolute favorites, and this recipe is exactly what we all love on a weekend.

Ingredient Notes

  • Ground chicken keeps this lighter than a traditional fried slider, and it takes on the buffalo flavor well. The mixture will be soft and sticky; that’s normal, not a sign anything’s wrong.
  • Buffalo sauce goes in two places. Some gets mixed into the meat for flavor throughout, and the rest becomes a glaze brushed on after baking. Splitting it this way means you get buffalo flavor in every bite without making the meat too wet to hold together.
  • The egg is doing real work here. Since there’s no individual dredging step to help the coating adhere, the egg mixed into the meat helps the whole slab hold together when it’s time to cut it into squares.
  • Panko goes both above and below the meat. A layer underneath, tossed with a little oil, gives the bottom some crust even without direct heat. The top gets a full panko coating for the crunch.

How to Make Buffalo Chicken Sliders

  1. Mix the meat. Combine ground chicken with a portion of the buffalo sauce, some panko, an egg, and seasonings. It’ll be soft and sticky, which is normal.
  2. Build the slab. Press a layer of panko onto parchment paper, spread the chicken mixture over it, then flatten everything evenly using a second sheet of parchment on top. Cover the top with more panko so both sides get a crust.
  3. Bake. Into a 425°F oven it goes until the top is deeply golden and the center reaches 165°F, about 18 to 22 minutes.
  4. Glaze and cut. Brush the hot slab with the remaining buffalo sauce mixed with melted butter, then cut it into neat squares with a sharp knife.
  5. Assemble. Layer each square onto a slider bun with a drizzle of ranch and lettuce, and serve right away.

Tips for Success

  1. The bottom won’t be quite as crisp as the top. With the meat resting directly on the pan, the juices collect underneath as it bakes. It’s still good, just don’t expect the same deep crunch you’d get frying. One trick that worked for me was to put the sheet pan on a lower rack so that the bottom cooks faster.
  2. Use a second sheet of parchment to flatten the meat. Pressing sticky ground chicken flat with your hands alone is messy. Laying parchment over the top and pressing with your palms (or the bottom of a pan) makes it much easier.
  3. Check doneness a few minutes early. This baked faster than expected in testing, around 20 minutes rather than the fuller 25. Start checking the center temperature at 18 minutes.
  4. Let it rest before cutting. Five minutes off the heat makes for cleaner, sturdier squares.

Serving and Storing

These are built for a slider bun with a drizzle of ranch, but they hold up well solo too. You can also serve over a salad, or alongside celery and carrot sticks for a lighter take on the classic wing-night spread.

Store leftover squares in an airtight container in the fridge for up to 3-4 days. Reheat in the oven or air fryer to help the top crisp back up — a microwave will soften it more than you’d probably like.

Ingredients 

  • 1.5 lbs ground chicken
  • 1/2 cups buffalo hot sauce*, divided
  • 1/3 cups panko breadcrumbs, for the meat mixture
  • 1 large egg
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1.5 cups panko breadcrumbs, for the top and bottom crust
  • 2 tbsp avocado or olive oil, divided
  • 1 tbsp butter, melted
  • 9 – 12 slider buns
  • 1/2 cup ranch dressing , (for serving)

Instructions 

  • Preheat the oven to 425 degrees F. Line a rimmed sheet pan with parchment paper. Spray with non-stick spray
  • In a large bowl, combine the ground chicken with 1/4 cup buffalo hot sauce, 1/3 cup panko breadcrumbs, egg, garlic powder, onion powder, salt, and pepper. Mix just until combined. It will be soft and sticky, which is normal for ground chicken.
  • Toss the panko breadcrumbs with the avocado or olive oil. Sprinkle 3/4 cup of the breadcrumbs on the baking sheet, spreading it in an even layer that is about a 9×9 inch square. This is for the bottom crust.
  • Spoon the chicken mixture over the panko and spread it toward the edges of the panko layer. Lay a second sheet of parchment on top and press the meat flat to an even thickness of about 1/2 inch. Peel off the top parchment. Cover the top of the chicken with the remaining panko, pressing it gently so it sticks.
  • Bake for 20 – 22 minutes (it may take up to 25 depending on your oven). Check at the 18 minute mark. The top should be well browned and the center should have an internal temperature of 165 degrees F. Remove from oven.
  • Drizzle the top with melted butter and the remaining buffalo sauce. Let it rest for at least 5 minutes, then slice into 9 – 12 equal squares.
  • Toast the slider buns in the oven if you like. Spread each slider with a drizzle of ranch and a chicken square. You can also top with blue cheese crumbles, lettuce, slaw, or arugula.
