Healthy Ham and Cheese Breakfast Biscuits
Ham and Cheese Breakfast Biscuits are the perfect hearty, healthy, and nutritious way to start your day! These delicious and fluffy biscuits are made with eggs, greek yogurt, ham, and cheese for an extra boost of protein. They make the best meal prep breakfast for you to enjoy throughout the week! These biscuits come together in less than 30 minutes total.

- 4 large eggs
- 1.5 cups plain greek yogurt
- 2.5 cups all purpose flour
- 1/3 cup ground flaxseed
- 1 tbsp baking powder
- 2 tsp garlic powder
- 1 tsp sea salt
- 1 cup shredded cheddar cheese
- 8 oz deli ham chopped into pieces
- 1/4 cup diced chives
- 1/2 cup shredded parmesan cheese
Preheat the oven to 375 degrees F. Line a baking sheet with parchment paper and set aside. You will need two baking sheets, so you can line two, or wait until the first batch comes out of the oven.
In a large bowl, whisk the eggs and yogurt until smooth.
In a smaller bowl, stir together flour, flaxseed, baking powder, salt, and garlic powder.
Add the dry ingredients to the egg mixture. Using a rubber spatula, mix until well combined and a thick dough forms. Stir in ham, cheddar cheese, and chives.
Using a cookie scoop or large spoon, scoop the dough onto the prepared baking sheet (about 2 inch balls). You should be able to fit about 12 - 15 per baking sheet with a total of 24 biscuits. Sprinkle each biscuit with parmesan cheese.
Bake for 15 - 20 minutes, depending on oven. My oven bakes fast and mine are perfect right at 15 minutes. They will have a slightly golden top with a golden brown bottom. Transfer the biscuits to a wire cooling rack for a 15 minutes before storing. You can also eat warm right out of the oven!
