If you are anything like me, you love starting your day with a hearty protein-packed egg breakfast. While this is my typical breakfast, I have to mix things up a bit to appease my teenagers. One of my teens loves all foods, loves to pack in protein, but happens to not like eggs. Creating these biscuits was specifically for him!

Reasons you will love these Protein Packed Ham and Cheese Biscuits

  • They are healthy and made with wholesome ingredients. Think eggs, ham, cheese, flour, chives, greek yogurt, and a few extra baking ingredients.
  • They are protein packed! Each small biscuit is right around 8 grams of protein and 100 calories. This is perfect if you only want a small snack, or need it as a meal and want to consume at least 3! As a nutritionist, I strive to have all of my meals packed with at least 30 grams of protein. These work to add to my goals.
  • They are customizable! You can swap out some ingredients such as use bacon in place of ham, or jalapeños in place of chives. Even add in some extra veggies like spinach or bell pepper.
  • They are perfect for meal prep! I have been all about my meal prep lately with our busy schedule, and also trying to keep my teenagers well fed. I bake a bunch on the weekend, and store in an air-tight freezer friendly container. They stay fresh and delicious as if you just pulled them out of the oven.

Ingredients to make Healthy Breakfast Biscuits

Here is what you need to make breakfast biscuits:

  • Eggs: eggs are going to help bind the biscuits and add in some protein. This recipe does not taste “eggy” which is a big reason my teen loves these!
  • Greek yogurt: use plain greek yogurt. I have made these with fat free greek yogurt and full fat. I do believe they taste a bit better with the full fat, but fat free definitely works! The yogurt is also going to boost the protein content
  • Flour: I use all purpose flour in this recipe. To make this gluten-free, you can substitute all purpose 1-1 baking flour that is gluten-free such as this one from Bob’s Red Mill.
  • Ground flaxseed: this can definitely be omitted, but I love the addition for some texture and also a little fiber.
  • Garlic powder: garlic powder, onion powder, or any additional spice you would like to add can give these biscuits a little flavor pop.
  • Baking powder: not baking soda is used in this recipe. This helps to maintain that tasty biscuit flavor! Make sure the baking powder is not expired.
  • Sea salt
  • Cheese: I use both cheddar and parmesan. The cheddar will be added to the batter and the parmesan for a sprinkle on top! Feel free to use just cheddar.
  • Chives: I love the addition of fresh chives in this recipe. You can also substitute with jalapeño for a jalapeño cheddar biscuit!
  • Ham: use deli sliced honey ham for additional protein and flavor in these biscuits.

How to make easy breakfast biscuits!

Here is how you make these biscuits, they really are super easy! Begin by prepping a large sheet pan by lining with parchment paper and preheating the oven to 375 degrees F.

  1. In a large bowl, whisk together the greek yogurt and eggs until smooth.
  2. In a smaller bowl, stir together the dry ingredients: flour, flaxseed, garlic powder, salt, and baking powder.
  3. Pour the dry ingredients into the bowl with the wet. Using a rubber spatula, mix until a thick dough forms. Now fold in the ham, cheddar cheese, and the chives.
  4. Using a cookie scoop or large spoon, spoon individual balls on the parchment paper with a little space in between each biscuit. Sprinkle with fresh parmesan cheese and place in the oven.
  5. Bake for 15 – 20 minutes (depending on your oven). Mine take right around 15 minutes, but things bake fast in my oven. You will notice a slight golden tint to the biscuits and a light brown bottom when they are read!

Storing

These store well in an air tight container in the freezer. Just take them out the morning you want to enjoy and microwave for 1 minute.

This is my favorite hack for heaving healthy and easy breakfasts on hand throughout the week! When my kids are rushing to get to school, they always have options for a nutrient dense breakfast. It doesn’t have to be a gourmet egg meal, these quick and easy biscuits do the trick!

Healthy Ham and Cheese Breakfast Biscuits

Ingredients 

  • 4 large eggs
  • 1.5 cups plain greek yogurt
  • 2.5 cups all purpose flour
  • 1/3 cup ground flaxseed
  • 1 tbsp baking powder
  • 2 tsp garlic powder
  • 1 tsp sea salt
  • 1 cup shredded cheddar cheese
  • 8 oz deli ham, chopped into pieces
  • 1/4 cup diced chives
  • 1/2 cup shredded parmesan cheese

Instructions 

  • Preheat the oven to 375 degrees F. Line a baking sheet with parchment paper and set aside. You will need two baking sheets, so you can line two, or wait until the first batch comes out of the oven.
  • In a large bowl, whisk the eggs and yogurt until smooth.
  • In a smaller bowl, stir together flour, flaxseed, baking powder, salt, and garlic powder.
  • Add the dry ingredients to the egg mixture. Using a rubber spatula, mix until well combined and a thick dough forms. Stir in ham, cheddar cheese, and chives.
  • Using a cookie scoop or large spoon, scoop the dough onto the prepared baking sheet (about 2 inch balls). You should be able to fit about 12 – 15 per baking sheet with a total of 24 biscuits. Sprinkle each biscuit with parmesan cheese.
  • Bake for 15 – 20 minutes, depending on oven. My oven bakes fast and mine are perfect right at 15 minutes. They will have a slightly golden top with a golden brown bottom. Transfer the biscuits to a wire cooling rack for a 15 minutes before storing. You can also eat warm right out of the oven!
