Low Carb, Keto, and Paleo Sandwich Bread

Ingredients

  • Keto Cooking Spray
  • 4 large eggs
  • 1 cup superfine blanched almond flour
  • 1/2 cup chia seeds
  • 1/4 cup unsweetened almond milk or water
  • 4 tbsp solid coconut oil or butter, melted
  • 2 tsp baking soda
  • 1/4 tsp sea salt
  • 1 tbsp raw honey* (optional, see note)

Instructions

  • Preheat the oven to 350 degrees. Grease an 8x4 loaf pan with cooking spray; set aside. (Do not use a larger loaf pan or the bread will be very flat.)
  • In a large bowl, combine eggs, almond flour, chia seeds, almond milk, melted coconut oil, baking soda, and salt. Stir until well combined and no lumps remain.
  • Pour the batter into the prepared pan and bake for 30 minutes. Cool the bread in the pan on a wire rack for 10 minutes. Turn the bread out of the pan. Let cool completely before serving

Notes

*This is used for Paleo versions only, not Keto. It gives the bread a slight sweetened taste that is very mild.
