Full disclosure here, I don’t care that much about bread. I don’t crave sandwiches or something to soak up my eggs with. My husband on the other hand? He is bread CRAZY!!!!! Bread and butter are the things he misses the most whenever he is on a round of Whole30. And my many attempts to get him to stop eating bread altogether are a total failure.
I knew it was time to come up with an alternative. Insert: Paleo + Keto Sandwich Bread.
Keto Fat Bombs, Sweets & Treats Cookbook
As soon as I got my hands on the new Keto Fat Bombs, Sweets & Treats Cookbook by Urvashi Pitre; the sandwich bread was calling my name! I loved the simple ingredients, all ingredients I already had in my pantry. Bonus: only one bowl required to mix, and a bake time of 30 minutes. EASY!!!
This cookbook is full of creative recipes for baking Keto recipes, many of which are also Paleo. Some other recipes I tried include the Seed Crackers and 5 ingredient Flourless Brownies. I am super excited to try the Maple-Nut Blondies, and Almond Butter Chocolate Bombs!
The Bread
I have tried a few different recipes for low carb bread, and found many of them to be very “eggy” and also lacking in flavor. I am thrilled with the texture in this bread, a buttery taste from the almond flour. But also, loving the addition of chia seeds for extra protein, fiber, and healthy fat!
To serve, this bread definitely needs a topping. Avocado, nut butter, or butter come to mind. Also, I heated it up a bit just before serving to give it that extra softness. Although my kids weren’t huge fans, I enjoyed topped with avocado and an egg. And my husband, he just slathered his with some butter.

Low Carb, Keto, and Paleo Sandwich Bread
Ingredients
- Keto Cooking Spray
- 4 large eggs
- 1 cup superfine blanched almond flour
- 1/2 cup chia seeds
- 1/4 cup unsweetened almond milk or water
- 4 tbsp solid coconut oil or butter, melted
- 2 tsp baking soda
- 1/4 tsp sea salt
- 1 tbsp raw honey* (optional, see note)
Instructions

Preheat the oven to 350 degrees. Grease an 8x4 loaf pan with cooking spray; set aside. (Do not use a larger loaf pan or the bread will be very flat.)

In a large bowl, combine eggs, almond flour, chia seeds, almond milk, melted coconut oil, baking soda, and salt. Stir until well combined and no lumps remain.

Pour the batter into the prepared pan and bake for 30 minutes. Cool the bread in the pan on a wire rack for 10 minutes. Turn the bread out of the pan. Let cool completely before serving
Recipe Notes
*This is used for Paleo versions only, not Keto. It gives the bread a slight sweetened taste that is very mild.
Too bitter! Are you sure it isn’t baking powder in place of baking soda?
I am sure it’s baking soda. I did prefer it with a bit of honey and didn’t find it bitter.
It tastes kinda like Irish Soda Bread. Sort of a salty flavor. But it’s good. You really can’t use it for a sandwich because it isn’t tall enough, but definitely good for topping with butter, almond butter, or what have you.
