Peach, Blackberry, and Avocado Salad

Ingredients

For the salad:

  • 4 cups arugula
  • 2 large peaches, sliced
  • 2 large avocados, sliced
  • 3/4 cup blackberries
  • 1/4 cup fresh mint leaves
  • 1/4 cup toasted pine nuts
  • 1 tsp red chili pepper flakes (optional)

For the dressing:

  • 1/4 cup avocado oil or olive oil
  • 3 tbsp fresh lime juice
  • 1 tbsp red or white wine vinegar
  • 2 tsp raw honey
  • 1/2 tsp sea salt
  • pinch black pepper

Instructions

  • Assemble your salad. In a large serving plate, place arugula on the bottom. Top with peach slices, avocado slices, blackberries, mint leaves, and pine nuts. Sprinkle with chili pepper (if using).
  • Whisk together your dressing: in a small bowl whisk together oil, lime juice, vinegar, honey, salt, and pepper. You can also place in a small jar with a lid and shake. 
  • Drizzle dressing over salad, and lightly toss. Serve immediately.
