Eating this flavorful salad made me realize I overlook the many uses of summer fruit. During the year, I am not a huge fruit person and prefer to nosh on all the veggies. But when it’s hot as can be, the thought of filling my belly and mouth with refreshing fruits is all I can think of.
Pairing some juicy peaches with avocado might be my new favorite thing. I added in the slightly sour blackberry to give it a nice balance, and was instantly hooked on this salad!!
Some other fun elements of this vibrant salad: red chili flakes to give a little kick, soft avocado slices that provide a smooth and yummy texture to the fruit, pine nuts, and fresh mint leaves. The honey lime vinaigrette is made by whisking together a few simple ingredients. The lime gives the salad a zesty citrus kick, and the honey enhances all the fruit and avocado slices!
I’ve currently been enjoying this combo all week for lunch, but it also works perfectly paired with lean protein source like grilled chicken or salmon. Such an easy and light weeknight meal!
Peach, Blackberry, and Avocado Salad
For the salad:
- 4 cups arugula
- 2 large peaches, sliced
- 2 large avocados, sliced
- 3/4 cup blackberries
- 1/4 cup fresh mint leaves
- 1/4 cup toasted pine nuts
- 1 tsp red chili pepper flakes (optional)
For the dressing:
- 1/4 cup avocado oil or olive oil
- 3 tbsp fresh lime juice
- 1 tbsp red or white wine vinegar
- 2 tsp raw honey
- 1/2 tsp sea salt
- pinch black pepper
Assemble your salad. In a large serving plate, place arugula on the bottom. Top with peach slices, avocado slices, blackberries, mint leaves, and pine nuts. Sprinkle with chili pepper (if using).
Whisk together your dressing: in a small bowl whisk together oil, lime juice, vinegar, honey, salt, and pepper. You can also place in a small jar with a lid and shake.
Drizzle dressing over salad, and lightly toss. Serve immediately.
