This salad will hold up for one day in the fridge, but I would suggest that you don’t add the avocado if going that route!
Refreshing Watermelon Cucumber Salad with Honey Lime Mint Dressing

Ingredients
For the Salad
- 4 cups Cubed seedless watermelon
- 1 large Cucumber, , diced
- 1 medium Avocado, , ripe but firm and diced
- 1/2 cup Crumbled feta cheese
- 1/3 cup Pepitas
- 1/4 cup Chopped fresh mint
Honey Lime Mint Dressing
- 1/4 cup Olive oil or avocado oil
- 1/4 cup Fresh lime juice
- 1 tbsp Honey
- 2 tbsp Chopped fresh mint
- pinch of sea salt
Instructions
- In a large serving bowl, combine the watermelon cubes, cucumber slices, and fresh mint. Gently toss to mix.
- Just before serving, add the diced avocado, crumbled feta, and pepitas.
- In a food processor or blender, blend the dressing ingredients: olive oil, lime juice, honey, chopped mint, and salt. Set aside.
- Drizzle the honey lime mint vinaigrette over the salad and very gently toss everything together to coat. Taste and adjust seasoning if needed.
