Refreshing Watermelon Cucumber Salad with Honey Lime Mint Dressing

Stay cool and nourished with this refreshing watermelon cucumber salad! Tossed with feta, avocado, crunchy pepitas, fresh mint, and a honey lime mint dressing, it’s the perfect hydrating side dish or light summer meal packed with flavor and nutrients.

Ingredients

For the Salad

  • 4 cups Cubed seedless watermelon
  • 1 large Cucumber, diced
  • 1 medium Avocado, ripe but firm and diced
  • 1/2 cup Crumbled feta cheese
  • 1/3 cup Pepitas
  • 1/4 cup Chopped fresh mint

Honey Lime Mint Dressing

  • 1/4 cup Olive oil or avocado oil
  • 1/4 cup Fresh lime juice
  • 1 tbsp Honey
  • 2 tbsp Chopped fresh mint
  • pinch of sea salt

Instructions

  • In a large serving bowl, combine the watermelon cubes, cucumber slices, and fresh mint. Gently toss to mix.
  • Just before serving, add the diced avocado, crumbled feta, and pepitas.
  • In a food processor or blender, blend the dressing ingredients: olive oil, lime juice, honey, chopped mint, and salt. Set aside.
  • Drizzle the honey lime mint vinaigrette over the salad and very gently toss everything together to coat. Taste and adjust seasoning if needed.
