Slow Cooker Creamy Chicken and Gnocchi Soup with Boursin Cheese

- 1.5 lbs chicken tenders (or chicken breasts)
- 1 small yellow onion, diced
- 3 cloves garlic, minced
- 1/2 cup sun-dried tomatoes, chopped (packed in oil, drained)
- 4 cups chicken broth
- 2 tsp dried Italian seasoning
- 1 5.2 oz package of Boursin cheese (garlic and herb flavor works best)
- 1 16 oz package of potato gnocchi
- 3 cups fresh spinach (about 3 large handfuls)
- 1 cup milk (whole or 2%)
- 1 tbsp corn starch or arrowroot powder
- salt and pepper to taste
Place chicken, onion, garlic, and sun-dried tomatoes in the bottom of your slow cooker. Pour chicken broth on top.
Add the Boursin cheese and Italian seasoning. Cover and cook on low for 4 hours.
Remove chicken, shred with two forks, and return it to the pot. Stir until the Boursin is fully incorporated into the broth.
Add gnocchi and spinach. Cover and cook for another 20 - 30 minutes.
In a bowl, whisk together the arrowroot or cornstarch with milk. Pour into the soup, stir, and cook another 5 - 10 minutes until the broth thickens slightly.
Add salt and pepper to taste. Garnish with Parmesan cheese and basil (optional).
