Slow Cooker Creamy Chicken and Gnocchi Soup with Boursin Cheese

Ingredients

  • 1.5 lbs chicken tenders (or chicken breasts)
  • 1 small yellow onion, diced
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped (packed in oil, drained)
  • 4 cups chicken broth
  • 2 tsp dried Italian seasoning
  • 1 5.2 oz package of Boursin cheese (garlic and herb flavor works best)
  • 1 16 oz package of potato gnocchi
  • 3 cups fresh spinach (about 3 large handfuls)
  • 1 cup milk (whole or 2%)
  • 1 tbsp corn starch or arrowroot powder
  • salt and pepper to taste

Instructions

  • Place chicken, onion, garlic, and sun-dried tomatoes in the bottom of your slow cooker. Pour chicken broth on top.
  • Add the Boursin cheese and Italian seasoning. Cover and cook on low for 4 hours.
  • Remove chicken, shred with two forks, and return it to the pot. Stir until the Boursin is fully incorporated into the broth.
  • Add gnocchi and spinach. Cover and cook for another 20 - 30 minutes.
  • In a bowl, whisk together the arrowroot or cornstarch with milk. Pour into the soup, stir, and cook another 5 - 10 minutes until the broth thickens slightly.
  • Add salt and pepper to taste. Garnish with Parmesan cheese and basil (optional).
