How to Make Slow Cooker Creamy Chicken and Gnocchi Soup

  1. Gather up your simple ingredients! You’ll need chicken breast, diced onion, garlic, sun-dried tomatoes, chicken broth, Boursin cheese, potato gnocchi, fresh spinach, and milk + arrowroot starch for thickening.
  2. Layer the ingredients in the slow cooker: place chicken, onion, garlic, and sun-dried tomatoes in the slow cooker. Pour chicken broth over the top and add Boursin cheese.
  3. Cover and cook on low for 4 hours.
  4. Remove the chicken, shred it, then return it to the pot. Stir to incorporate the melted Boursin into the broth.
  5. Stir in gnocchi and spinach, then cook another 20 – 30 minutes.
  6. Make it extra creamy by mixing milk with corn starch or arrowroot, pour it in, and stir until the soup thickens slightly. This step is optional, but it definitely made for a thicker and creamier soup!
  7. Serve and enjoy! Ladle into bowls and top with parmesan cheese or fresh basil if desired.

Tips and Variations

  • Sauté the onion, garlic, and sun-dried tomatoes. This step is optional, especially if you want a truly dump and go recipe, but it does elevate the flavor a bit!
  • Swap the protein if you’d like! You can try with turkey, Italian sausage, or even shrimp.
  • Extra veggies can definitely be added! Mushrooms, zucchini, kale, or fresh basil in place of spinach are all good options.
  • Stovetop version: saute onion/garlic, add chicken and broth, simmer until cooked, the follow with same finishing steps.

Ingredients 

  • 1.5 lbs chicken tenders (or chicken breasts)
  • 1 small yellow onion, , diced
  • 3 cloves garlic, , minced
  • 1/2 cup sun-dried tomatoes, chopped, (packed in oil, drained)
  • 4 cups chicken broth
  • 2 tsp dried Italian seasoning
  • 1 5.2 oz package of Boursin cheese, (garlic and herb flavor works best)
  • 1 16 oz package of potato gnocchi
  • 3 cups fresh spinach, (about 3 large handfuls)
  • 1 cup milk, (whole or 2%)
  • 1 tbsp corn starch or arrowroot powder
  • salt and pepper to taste

Instructions 

  • Place chicken, onion, garlic, and sun-dried tomatoes in the bottom of your slow cooker. Pour chicken broth on top.
  • Add the Boursin cheese and Italian seasoning. Cover and cook on low for 4 hours.
  • Remove chicken, shred with two forks, and return it to the pot. Stir until the Boursin is fully incorporated into the broth.
  • Add gnocchi and spinach. Cover and cook for another 20 – 30 minutes.
  • In a bowl, whisk together the arrowroot or cornstarch with milk. Pour into the soup, stir, and cook another 5 – 10 minutes until the broth thickens slightly.
  • Add salt and pepper to taste. Garnish with Parmesan cheese and basil (optional).

    This was absolutely delicious!! It was so easy to put together too! I used GF gnocchi (I was worried about it and didn’t know if it would cook well in the crockpot but it was still perfect!) I will definitely be making this again!!
