Strawberry Avocado Salad
Sweet strawberries and creamy avocado are one of my favorite warm weather pairings. Add a simple homemade dressing, and you've got a salad that feels fresh, colorful, and right at home at everything from weeknight dinners to backyard cookouts.

For the Salad:
- 12 oz fresh strawberries stems removed and chopped
- 1 1/2 large avocados or 2 small/medium avocados chopped
- 1/3 cup chopped red onion
- 1/4 chopped fresh cilantro
- 6 cups loosely packed arugula can also use spinach
- 1/4 cup pine nuts
For the Dressing:
- 3 tbsp avocado oil or olive oil
- 1/4 cup lemon juice
- 1 tsp lemon zest
- 1.5 tbsp coconut aminos or soy sauce
- 1/2 tsp garlic powder
Assemble your salad. Toss together strawberries, avocado, onion, cilantro, and arugula very gently (being careful with the soft avocado).
In a small bowl whisk together dressing ingredients, or add to a jar and shake.
Once ready to serve, toss dressing with salad ingredients gently. Top with pine nuts and serve.
