Strawberry Lemon Overnight Oats
Bright, creamy, and packed with protein, these Strawberry Lemon Overnight Oats are the ultimate meal prep breakfast. Made in just 5 minutes the night before, they're ready to grab and go all week long!
Servings: 4
- 2 cups plain Greek yogurt (full fat or 2%)
- 1 cup milk (dairy or unsweetened almond)
- 3 tbsp honey
- 1 tbsp pure vanilla extract
- 2 tbsp fresh lemon juice
- 2 tsp lemon zest
- 2 cups old-fashioned rolled oats
- 2 tbsp chia seeds
- 2 cups fresh strawberries (hulled and diced)
- pinch sea salt
In a large bowl, whisk together the wet ingredients: yogurt, milk, honey, vanilla extract, lemon juice, and lemon zest.
Now stir in the oats and chia seeds, then fold in half of the strawberries. Save the other half for topping.
Divide evenly into 4 jars or bowls. Top each jar with the remaining diced strawberries.
Refrigerate overnight or for at least 6 hours. Oats will keep in the fridge for up to 5 days. You can enjoy cold, or heat up for one minute in the microwave each morning of serving.
