Strawberry Lemon Overnight Oats

Bright, creamy, and packed with protein, these Strawberry Lemon Overnight Oats are the ultimate meal prep breakfast. Made in just 5 minutes the night before, they're ready to grab and go all week long!

Ingredients

  • 2 cups plain Greek yogurt (full fat or 2%)
  • 1 cup milk (dairy or unsweetened almond)
  • 3 tbsp honey
  • 1 tbsp pure vanilla extract
  • 2 tbsp fresh lemon juice
  • 2 tsp lemon zest
  • 2 cups old-fashioned rolled oats
  • 2 tbsp chia seeds
  • 2 cups fresh strawberries (hulled and diced)
  • pinch sea salt

Instructions

  • In a large bowl, whisk together the wet ingredients: yogurt, milk, honey, vanilla extract, lemon juice, and lemon zest.
  • Now stir in the oats and chia seeds, then fold in half of the strawberries. Save the other half for topping.
  • Divide evenly into 4 jars or bowls. Top each jar with the remaining diced strawberries.
  • Refrigerate overnight or for at least 6 hours. Oats will keep in the fridge for up to 5 days. You can enjoy cold, or heat up for one minute in the microwave each morning of serving.
