Strawberry lemon overnight oats in clear bowls topped with fresh strawberries and sesame seeds—a make-ahead breakfast parfait.

I developed this recipe specifically for spring, when fresh strawberries are their peak and we’re all craving something lighter and brighter after the heavy comfort food of winter. The combination of sweet strawberries and zesty lemon is fresh and cheerful, that it makes me excited to get my day started! These meal prep bowls are similar to my other grab and go breakfasts like my Baked Blueberry Cottage Cheese Bowls or Frittata Bowls.

As a nutritionist and busy mom, these oats are exactly the breakfast recipe I want my family to enjoy to stay full and satisfied all morning. With Greek yogurt and chia seeds working together, each bowl contains 18 grams of protein, and also loaded with 7 grams of fiber. This combo means no mid-morning crash and no reaching for snacks within an hour of breakfast!

Why You’ll Love This Recipe

  • 5 minute-prep: stir everything together the night before and wake up to breakfast already done!
  • High protein: Right about 18 grams per bowl thanks to the chia seeds and Greek yogurt!
  • Bright spring flavors: fresh strawberries and lemon zest make this feel like a little treat.
  • Perfect for meal prep: make 4 bowls on a Sunday, and you have 4 breakfasts throughout the week.
  • Endlessly customizable: swap the strawberries for blueberries or raspberries, even peaches depending on the season.
  • No heating required! You can definitely heat these for 1 minute if you prefer a warm oatmeal, but they taste great cold.

How to Make These Strawberry Lemon Overnight Oats

This recipe comes together to easily with just a handful of ingredients: old-fashioned rolled oats, plain Greek yogurt (full fat or 2% works best), milk (dairy or unsweetened almond milk works great), chia seeds, honey, lemon zest and lemon juice, vanilla extract, and fresh strawberries.

Fresh strawberries, oats, yogurt, milk, lemon, honey, vanilla, and chia seeds arranged on a wooden tray for strawberry-lemon overnight oats recipe.

Just combine the wet ingredients first: milk, yogurt, honey, lemon juice, and vanilla extract and stir. Then stir in oats, chia seeds, and half of the strawberries. I combine in a large bowl first, and let sit for several hours (or overnight). When ready to serve, top with more strawberries!

Key Tips for Success!

  • Use old fashioned oats, and not quick oats.
  • Make sure all of the oats are submerged.
  • Mix everything in the large bowl, and then evenly divide into 4 smaller portions (bowls or mason jars).
  • Adjust consistency in the morning. If the oats are too thick, you can add a splash of milk.
  • Warm in the microwave for 1 minute if you prefer warmer oats
  • Add more strawberries right before eating.
  • Store these in the fridge for up to 5 days!
