How to Make These Strawberry Lemon Overnight Oats
This recipe comes together to easily with just a handful of ingredients: old-fashioned rolled oats, plain Greek yogurt (full fat or 2% works best), milk (dairy or unsweetened almond milk works great), chia seeds, honey, lemon zest and lemon juice, vanilla extract, and fresh strawberries.

Just combine the wet ingredients first: milk, yogurt, honey, lemon juice, and vanilla extract and stir. Then stir in oats, chia seeds, and half of the strawberries. I combine in a large bowl first, and let sit for several hours (or overnight). When ready to serve, top with more strawberries!


Key Tips for Success!
- Use old fashioned oats, and not quick oats.
- Make sure all of the oats are submerged.
- Mix everything in the large bowl, and then evenly divide into 4 smaller portions (bowls or mason jars).
- Adjust consistency in the morning. If the oats are too thick, you can add a splash of milk.
- Warm in the microwave for 1 minute if you prefer warmer oats
- Add more strawberries right before eating.
- Store these in the fridge for up to 5 days!

Strawberry Lemon Overnight Oats

Ingredients
- 2 cups plain Greek yogurt , (full fat or 2%)
- 1 cup milk, (dairy or unsweetened almond)
- 3 tbsp honey
- 1 tbsp pure vanilla extract
- 2 tbsp fresh lemon juice
- 2 tsp lemon zest
- 2 cups old-fashioned rolled oats
- 2 tbsp chia seeds
- 2 cups fresh strawberries, (hulled and diced)
- pinch sea salt
Instructions
- In a large bowl, whisk together the wet ingredients: yogurt, milk, honey, vanilla extract, lemon juice, and lemon zest.
- Now stir in the oats and chia seeds, then fold in half of the strawberries. Save the other half for topping.
- Divide evenly into 4 jars or bowls. Top each jar with the remaining diced strawberries.
- Refrigerate overnight or for at least 6 hours. Oats will keep in the fridge for up to 5 days. You can enjoy cold, or heat up for one minute in the microwave each morning of serving.
