Grapefruit and Mint Green Juice is a refreshing treat for the hot summer days! Enjoy it as an afternoon snack, or for your morning breakfast.
I LOVE grapefruit. I am not much of a fruit person, but grapefruit is my favorite. I love the slightly sour and bitter sweet taste, and now it’s becoming one of my “go-to” add-ins to juice. For me personally, it can also be a boost to my day if I happen to be feeling a little sluggish and a sugar craving hits me. Grapefruit is loaded with nutritional benefits as well: Vitamin C, the phytochemical lycopene, Vitamin A, potassium, and fiber to name a few. These nutrients work together to provide a powerful immune booster, stress reducer, and even work to lower our LDL cholesterol. This juice is a great way to add some grapefruit to your diet! Although it’s not necessarily in peak season at the moment, look for grapefruits with a pink and red hue to maximize your nutritional benefits.
So with this juice, I added mint, cucumber, spinach, and a touch of coconut oil for some fat. The coconut oil also aids to help replace some lost electrolytes. So if you’ve been working out hard in this summer heat, this is a perfect afternoon replenisher! My kids also happen to be huge fans of grapefruit. They don’t love all green juice, but they did enjoy this one.

Grapefruit and Mint Green Juice
Ingredients
- 2 grapefruits
- 1/2 cup fresh chopped mint
- 1/2 cup chopped cucumber
- 3/4 cup loose raw spinach
- 1/2 cup water
- 2 tbsp coconut oil melted
Instructions

Juice the grapefruits and pour into a blender (alternatively, you can peel the grapefruit and place it in the blender. This makes it more pulpy)

Add the remaining ingredients, and blend until nice and smooth.

Serve and drink immediately
