This salad is full of everything you love about the summer! It’s loaded with berries, fresh basil and mint, fresh arugula, and layers of flavor including pine nuts and optional prosciutto. Such a festive salad, too! Sure to be a crowd pleaser, or just an easy weeknight dinner.

I love a caprese salad. From years living in Europe, a fresh Caprese was my favorite menu item to order on a summer day. I have spent years creating fun variations of a simple, Caprese salad with mozzarella, fresh basil, tomatoes, balsamic glaze, sea salt, and arugula for some added spice. I still remember a restaurant in Germany serving Caprese with some salty prosciutto, and I’ve never forgotten this added touch!
As a nutritionist, I do love creating fun salad recipes for the summer. This one is no exception! After buying a ton of berries this week, I decided this variation with fresh fruit is such a perfect option for a gorgeous Memorial Day or 4th of July spread.
How to make Berry Caprese Salad
This simple recipe requires some easy ingredients:
- Blueberries
- Raspberries
- Mozzarella balls
- Fresh mint and basil
- Arugula
- Avocado oil or olive oil
- Lemon juice
- Sea salt
- Balsamic glaze
- Pine nuts
- Prosciutto (optional)
You will create a few layers of deliciousness here! We start with a bed of arugula. Sprinkle some lemon juice, olive oil or avocado oil, and sprinkle some sea salt on the bed of arugula.
Top with mozzarella, berries, fresh herbs, and balsamic glaze. Top with pine nuts and prosciutto!
Options and adaptations:
- Prosciutto: is an option! You can make this a vegetarian recipe and omit. I just love the salty and sweet combo!
- Greens: I love arugula here, but you can omit altogether, or substitute with spring greens.
- Berries: Feel free to swap in strawberries or blackberries. Even a mix of all of it!

Berry Caprese Salad
This fresh and delicious Berry Caprese Salad is layers of flavor! You'll love how festive this salad is, and that you can toss it together in 10 minutes!
Ingredients
- 4 cups Arugula
- 1 tbsp Avocado oil or olive oil
- 2 tbsp Lemon juice
- 1/2 tsp Sea salt
- 2 cups Blueberries
- 2 cups Raspberries
- 8 oz Mozzarella balls
- 2 tbsp Chopped fresh basil
- 2 tbsp Chopped fresh mint
- Balsamic glaze*
- 1/3 cup Toasted pine nuts
- 8 slices Prosciutto (optional)
Instructions

On a large platter, spread out the arugula. Toss with oil, lemon juice, and sea salt.

Top with berries, mozzarella, and fresh herbs. Drizzle with balsamic glaze, I probably drizzled at least 2 tbsp, a little does go far here. But, add as much as you'd like!

Add the optional pine nuts and prosciutto. Dig in!!
Recipe Notes
*Balsamic glaze is a thickened syrup that is naturally sweetened and can be found in most grocery stores. I buy mine from Trader Joes, but it’s also simple to make! You can heat a saucepan with balsamic vinegar and honey or maple syrup. Bring to a gentle boil and reduce heat. Let simmer until thickened, about 5 minutes. Cool completely and store.Â
