Totally not kidding when I say 1 minute guacamole, I even timed myself last night. I love avocados as much as anyone, but sometimes they just need a little something extra for me to devour by the spoonful. That is exactly what happens to this easy dip! I was almost not going to call it guacamole because it is soooo simple and requires just a few ingredients. But last night when I served it, both my dad and husband commented on how much they loved the “guacamole”. So there you go, it’s guacamole. I actually prefer my guac with some cilantro, tomatoes, garlic, and chopped green onion. However, on busy days when I want a simple kick to my dishes, or I want an easy and healthy dip for the kids: this is a perfect go-to recipe.
It takes just 2 avocados, 1 lemon, a tsp of cumin, and some sea salt. That’s it! No fancy kitchen gadgets, no food processor, but just a simple fork to mash it up. I love it as a spread on a sandwich, with my morning eggs, on a piece of toast for breakfast, on my tacos, on my burgers, the possibilities are endless! I recently started calling this the “Green Monster Sauce” to the kids. Guess what happened? The kid who claimed he didn’t like avocados is now excitedly asking for Green Monster Sauce.
In the picture above, I did add sea salt with crushed red pepper. Totally optional, but once again an extra kick. If you want to add the cilantro, tomatoes, and green onion, go ahead. Just don’t hold me to the 1-minute time limit! Also, you can easily half this recipe. I do this often when I realize I only have 1 avocado lying around. In that case, it will go very quickly!
- 2 avocados, peeled and seeded
- Juice of 1 lemon
- 1 tsp cumin
- 1/2 tsp Sea Salt (maybe more)
- Place the peeled avocado in a small bowl and mash with a fork.
- Add lemon, cumin, and salt.
- Continue mashing with a fork until well blended.
- Enjoy!
