Gather up these ingredients:
- Cottage cheese – I recommend small-curd, whole milk for creaminess, but low-fat works too.
- Eggs – Help bind and add structure.
- Rolled oats – Blend into oat flour for a wholesome base.
- Baking powder – Gives the waffles lift.
- Seasonings – Vanilla and cinnamon for sweet, or garlic powder and fresh herbs for savory.
- Optional fat – A tablespoon or two of melted butter or coconut oil makes them extra crisp! I also love parmesan in the savory waffles.


- Preheat your waffle maker.
- Add cottage cheese, eggs, oats, baking powder, salt, and seasonings (depending on sweet or savory) into a blender. Blend until smooth.

Easy Cottage Cheese Waffles (Sweet or Savory Option!)

Ingredients
- 1 cup cottage cheese
- 2 large eggs
- 1 cup rolled oats
- 1-2 tbsp maple syrup or honey*
- 1 tsp vanilla extract**
- 1 tsp baking powder
- pinch of salt
For Savory waffles
- 1/4 cup fresh basil or fresh herb of choice
- 1/3 cup shredded parmesan cheese
Toppings
- Fresh berries and maple syrup, (for sweet waffles)
- Eggs (or smoked salmon) and avocado , (for savory waffles)
Instructions
- Preheat the waffle iron
- Add cottage cheese, eggs, oats, baking powder, salt, and optional seasonings (sweet or savory) into a blender. Omit syrup and vanilla extract if making the savory version. Blend until smooth and creamy
- Grease the waffle iron with oil spray or butter. Pour in batter and cook until golden brown and crisp (time depends on your waffle maker, usually 3–5 minutes).
- Remove and serve warm.
