Soup Season and the Instant Pot are a match made in heaven. Instant Pot Sausage Pizza Soup is exactly where we need to be right now: finding that balance between rich and comforting soup, but yet still light and healthy. All with the delicious taste of pizza that we all love and crave!!
The layers of rich tomato sauce, sausage, bell peppers, artichoke hearts, and some Italian herbs make this pizza soup a meal the entire family can get on board with. The best part? Less than 30 minutes from start to finish!

How to make Instant Pot Sausage Pizza Soup:
I’m super excited about this recipe you guys; I think you’re going to absolutely love it!! To start we’ll gather up some simple ingredients.
Ingredients:
- 1.5 lbs Italian Sausage (can be mild or spicy)
- onion
- garlic
- bell peppers (any variety of colors)
- canned tomato puree
- artichoke hearts
- red wine vinegar
- chicken broth
- Italian seasoning
- crushed red pepper
- olives (optional)
- fresh basil
- parmesan cheese (optional)
Directions:
We start by selecting the saute function on the Instant Pot and cook the Sausage, onion, and garlic.
Once the sausage is cooked, select cancel. Now we add in the bell peppers, tomato puree, artichoke hearts, red wine vinegar, chicken broth, and Italian seasoning. Cook for 7 minutes at high pressure, then use a quick release.
Serving and Storing:
To serve, top with sliced olives, fresh basil, and parmesan cheese. All optional, but great additions!
Recipe will keep well in the fridge for up to 1 week, or can be frozen in an air tight container for up to 2 months. To thaw, just place in a large pot and cook on low.

Slow Cooker instructions:
You can also use the slow cooker in this recipe! Cook the sausage and onion completely before adding to the pot. Place sausage, onion, garlic, tomatoes, bell pepper, artichoke hearts, salt, seasoning, broth, and vinegar into the slow cooker. Cook on low for 4 hours. Garnish with optional toppings.
Recipe Adaptations:
Sausage: you can use turkey or chicken sausage in place of pork
Artichoke hearts: I absolutely love artichoke hearts on my pizza. You can easily omit, or use sun dried tomatoes instead.
Bell peppers: I feel that these are pretty essential, and I used green and yellow bell peppers. Feel free to swap with red or orange!
Fresh Basil: I love to add greens to my pizza. Feel free to swap in fresh oregano or even chopped fresh arugula!

Ingredients
- 1 tbsp avocado oil or olive oil
- 1.5 lbs Italian Sausage (mild or hot)
- 1 small yellow onion diced
- 2 cloves garlic minced
- 1 green bell pepper diced
- 1 yellow bell pepper diced
- 28 oz can pureed tomatoes
- 8 oz marinated artichoke hearts drained
- 1/4 cup red wine vinegar
- 4 cups chicken broth
- 1 tsp kosher salt
- 3 tsp Italian seasoning
- 1/2 cup sliced olives (optional)
- 2 tsp crushed red pepper (optional)
- 1/3 cup fresh basil (optional)
- 1/3 cup shredded parmesan (optional)
Instructions

Select the saute function on the Instant Pot. Once hot, coat the bottom of the pot with oil. Cook the sausage for 3-4 minutes, then toss in the onion and garlic. Cook for another 2-3 minutes. Select cancel. Drain any noticeable fat from the sausage.

Now add the bell peppers, tomatoes, artichoke hearts, vinegar, broth, salt, and Italian seasoning. Scrape the bottom of the pot to ensure the pan is deglazed. Secure the lid. Cook on high pressure for 8 minutes.

Use a quick release when cook time is complete. Once steam is completely released, remove the lid.

Stir in crushed red pepper and olives (if using). Garnish with fresh basil and parmesan.

follow the first instruction of cooking the sausage, then add in the onion garlic. Toss in the remaining ingredients, bring to a boil, then let simmer for 10-12 minutes before serving.
