Soup Season and the Instant Pot are a match made in heaven. This pizza-inspired soup hits the perfect balance between rich and comforting, yet light and healthy. The layers of tomato sauce, Italian sausage, bell peppers, artichoke hearts, and herbs make this a meal the whole family can enjoy. Best of all, it comes together in less than 30 minutes!

How to make Instant Pot Sausage Pizza Soup:

Start by turning your Instant Pot to the sauté setting. Cook the sausage, onion, and garlic until the sausage is browned and the onions are soft. The aroma alone will have your kitchen smelling amazing!!

Once cooked, press cancel. Add in bell peppers, tomato puree, artichoke hearts, red wine vinegar, chicken broth, and Italian seasoning. Seal the Instant Pot and cook on high pressure for 7 minutes. Use a quick release when done.

Slow Cooker Option

You can easily make this in a slow cooker too! Cook the sausage and onion first, then add everything to the slow cooker including garlic, tomatoes, bell peppers, artichoke hearts, broth, vinegar, and seasonings. Cook on low for 4 hours. Top with optional garnishes before serving.

Serving Suggestions

Top each bowl with sliced olives, fresh basil, and parmesan cheese if you like. These are optional but add a pop of flavor and freshness!

This soup keeps well in the fridge for up to a week or can be frozen in an airtight container for up to 2 months. To reheat, place in a pot over low heat until warmed through.

  • Sausage: Swap pork for turkey or chicken sausage if you prefer.
  • Artichoke Hearts: Love them on your pizza? Keep them! Or replace with sun-dried tomatoes.
  • Bell Peppers: I love green and yellow peppers for color, but red or orange work too.
  • Fresh Basil: Swap in fresh oregano or arugula for extra greens!

Instant Pot Sausage Pizza Soup

Ingredients 

  • 1 tbsp avocado oil or olive oil
  • 1.5 lbs Italian Sausage (mild or hot)
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 1 green bell pepper, diced
  • 1 yellow bell pepper, diced
  • 28 oz can pureed tomatoes
  • 8 oz marinated artichoke hearts, drained
  • 1/4 cup red wine vinegar
  • 4 cups chicken broth
  • 1 tsp kosher salt
  • 3 tsp Italian seasoning
  • 1/2 cup sliced olives, (optional)
  • 2 tsp crushed red pepper, (optional)
  • 1/3 cup fresh basil, (optional)
  • 1/3 cup shredded parmesan, (optional)

Instructions 

  • Select the saute function on the Instant Pot. Once hot, coat the bottom of the pot with oil. Cook the sausage for 3-4 minutes, then toss in the onion and garlic. Cook for another 2-3 minutes. Select cancel. Drain any noticeable fat from the sausage.
  • Now add the bell peppers, tomatoes, artichoke hearts, vinegar, broth, salt, and Italian seasoning. Scrape the bottom of the pot to ensure the pan is deglazed. Secure the lid. Cook on high pressure for 8 minutes.
  • Use a quick release when cook time is complete. Once steam is completely released, remove the lid.
  • Stir in crushed red pepper and olives (if using). Garnish with fresh basil and parmesan.

      Hi Laura,

      follow the first instruction of cooking the sausage, then add in the onion garlic. Toss in the remaining ingredients, bring to a boil, then let simmer for 10-12 minutes before serving.
