Nutrition Benefits of eating artichokes
I’m back with an in-season vegetable and using one of my favorite appliances! As a nutritionist, I wait for the beginning of each new season and celebrate by eating the season’s best produce. Artichokes are in season from March to May, and in most places, you can only find them in stores for 6-8 weeks. Don’t let this nutrition powerhouse veggie slip by!
Artichokes are packed with antioxidants like vitamins C and A, and are also a gut healthy food loaded with fiber (7 gm in one artichoke!). For a vegetable, they also contain a considerable amount of protein with 3.5 grams per artichoke. Artichokes are also known to be a top immune-boosting food!
Why Artichokes in the Instant Pot?
As many of you already know, I absolutely love hitting the easy button and using my Instant Pot for just about everything. There is nothing better than a hands off meal. It should come as no surprise that when I came across artichokes in the grocery store, I knew we had to try a steaming method using the Instant Pot.
And just as I suspected, the Instant Pot did not fail me! The artichoke hearts are fork tender and delicious, with leaves that easily peel off. Only 12 minutes of cook time and only a few minutes of prep time required to get these on your table!

How to make Steamed Artichokes in the Instant Pot:
We will need to gather up just a few simple ingredients, in addition to a trivet or steam basket that fits inside the Instant Pot. This recipe comes together so easily with just a few steps:
- Remove the outer leaves, and remove the stem from your artichokes.
- Brush each artichoke with lemon juice
- Pour water in the bottom of the Instant Pot and insert the steam trivet. Arrange artichokes stem side down so that they sit upright.
- Secure the lid and select manual or high pressure for 12 minutes. Use a quick release.
- Meanwhile, prepare the lemon garlic butter by stirring the dijon mustard, remaining lemon juice, garlic and salt with butter.
- Serve warm with the lemon butter garlic sauce.
Lemon Garlic Butter for dipping
These artichokes have a simple and delicious sauce that is absolutely perfect for artichokes! We combine melted better, lemon juice, dijon mustard, and crushed garlic. You can easily adapt this recipe and add in fresh herbs (like basil or rosemary), or even omit the dijon mustard.
Can I make these Paleo and Whole30?
Absolutely! Just omit the butter and use ghee in it’s place.

Instant Pot Steamed Artichokes
These Instant Pot Steamed Artichokes are so nutritious, packed with antioxidants, and come together so easily and quickly in the Instant Pot! They also taste absolutely delicious dipped in a lemon garlic butter.
Ingredients
- 4 medium to large globe artichokes
- 1 lemon
- 1 cup water
- 1 tsp dijon mustard
- 1 clove garlic (minced)
- 1/4 tsp sea salt
- 4 tbsp unsalted butter or ghee (melted)
Instructions

Prep the artichokes by removing the outer leaves, and trimming about 1/2 inch off the top. Remove the stem so the artichokes can sit upright.

Juice the lemon, and brush each artichoke with a bit of lemon.

Pour the water into the bottom of the Instant Pot and insert the steam trivet. Arrange the artichokes, stem side down, on the trivet so they sit upright.

Secure the lid of the Instant Pot. Select manual and cook on high pressure for 12 minutes. Use a quick release.

While artichokes are steaming, prepare the lemon garlic butter sauce. In a small bowl, stir the dijon mustard, remaining lemon juice, and garlic, and salt into the melted butter.

Serve by peeling the warm leaves off of each artichoke, and dipping the bottom (heart) into the lemon garlic butter.
