Peanut Butter and Banana blended up with Chobani® Non-Fat Plain Greek Yogurt and topped with toasted coconut to create a super easy protein packed breakfast!!

Now that the New Year is approaching, and the busy season is winding down, I am back to focusing on my favorite part of the day: BREAKFAST!! I’ll admit that I have been lazy in this category over the past month and not as creative as I would like to be.

My goal is to make breakfast a priority, and create simple and nutritious meals that my whole family can enjoy. Even on those busy weekday mornings where we are short on time, I am committed to a wholesome breakfast that does not come out of a cereal box. We’re starting off with this super yummy protein-packed smoothie bowl with all of my family’s favorite things:

Since my kids don’t eat eggs often, I am always on the lookout for getting them other breakfast options with plenty of protein. Chobani® Non-Fat Plain Greek Yogurt is a staple for our household as each serving provides 15g of protein and three different types of probiotics! It’s not only the nutrient density that I love, but also that it contains no artificial sweeteners or flavors, and only natural non-GMO ingredients. I also love to use it in our smoothies, enjoy a bowl with various fruit and nut toppings, or use it to make overnight oatmeal. And of course, it makes an appearance at taco night as a super easy substitute for sour cream. I buy a large 32 oz container at my local Walmart, sometimes purchasing a few at a time as this versatile staple is used up quickly in my house! You can easily find several different flavors of Chobani® yogurt in the dairy section at Walmart:

This super simple smoothie bowl can now take the place of the dreaded cereal. Why? Because it’s so easy and simple! I just whipped together Chobani® greek yogurt, almond milk, a banana, and peanut butter. Poured in a bowl and topped with a few of my favorite things: toasted coconut, cinnamon, and a drizzle of honey. Cereal is often packed with artificial ingredients and sugars, and is not very nutrient dense. With this smoothie bowl, we have plenty of healthy fats and protein without any refined sugar! Combining fat and protein helps to keep you full longer, and feeling energized throughout the morning. With less than 5 minutes of prep time, what else do you need for breakfast?

Peanut Butter and Banana Smoothie Bowl with Toasted Coconut

Ingredients 

  • For the Smoothie Bowl:
  • 1 cup ChobaniĀ® Non-Fat Plain Greek Yogurt
  • 2 cups almond milk
  • 1 banana
  • 1/3 cup natural peanut butter, crunchy or smooth is fine
  • Additional Optional Toppings:
  • 1/2 cup unsweetened toasted coconut chips or shredded coconut*
  • 1 tsp cinnamon
  • 2 tsp honey
  • Sliced bananas

Instructions 

  • Begin by placing ChobaniĀ®, milk, banana, and peanut butter in a blender. Blend until smooth. Pour into bowls.
  • Top with toasted coconut, bananas, cinnamon, and honey.

Notes

Coconut chips usually already come toasted. If not, you can quickly toast unsweetened shredded coconut in a large skillet for 3-4 minutes over medium-high heat.
