Red, White, and Blueberry Overnight Oats combine freshly ripe raspberries, blueberries, and coconut flakes to your lightly sweetened morning oats. This super simple breakfast is prepped in just a few minutes the night before, and ready to eat in the morning!

I am totally that nerdy mom that loves to celebrate holidays by creating food to match the theme. I used to do this and add food dyes to certain things, but I have since changed my ways after seeing the effect it had on my kids (they would become raging lunatics: mini versions). You can still have fun with colorful food, and the easiest way is through fruits and vegetables. This breakfast is the plan for our HUGE 4th of July celebration. We’ll start off the day with these nutrient packed bowls of yumminess. Oatmeal lovers should rejoice in the fact that you don’t have to quit eating your beloved favorite breakfast in the summer because of the heat. Overnight oats are stored in the fridge overnight, and ready to eat cold in the morning. Top with some granola or nuts if you want that extra crunch!

So the night before: stir together the yogurt (use Greek yogurt for high protein), oats, honey, vanilla, and flax milk. Coconut milk, almond milk, soy milk, etc. are also great alternatives to flax milk. This will take all of about 2 minutes. Top with the fresh berries and coconut. Store in the fridge overnight. In the morning, pour the contents in a bowl and give it a good stir. It looks like this:

Add in nuts or granola like I mentioned above. A banana would also work quite nicely here, and could even be used in place of coconut flakes as your white part of the dish (especially if you are not a fan of coconut). So easy, right? This is my favorite and easiest breakfast to make for my kids. It takes me about the same amount of time to pour a bowl of cereal, but this method is way more nutritious. Enjoy!!

Red, White, and Blueberry Overnight Oats

Ingredients 

  • 1/2 cup rolled oats
  • 1/2 cup plain greek yogurt
  • 1/2 cup flax milk, or whatever milk you choose
  • 1 tsp honey
  • 1/2 tsp vanilla extract
  • 1 cup blueberries
  • 1 cup raspberries
  • 1/4 cup coconut flakes

Instructions 

  • The night before, mix together your first 5 ingredients into a bowl, and place in a large glass jar (bowl or tupperware is also fine).
  • Top with blueberries, raspberries, and coconut.
  • Place into the fridge.
  • In the morning, the oats will have soaked up the liquid. Give it a good stir, and serve! You can add nuts, granola, or chia seeds as another healthy option with a crunch.
