In my less than one month of blogging, I have discovered my readers’ two favorite words: SLOW & COOKER. I get it. Most of us are busy and don’t have the time to prep a dinner for an hour, and then wait around for it to cook. So here is another new and interesting one for you: Slow Cooker Buffalo Chicken and Quinoa. I love that I can be creative and try new recipes for you in my slow cooker.
What I love about this Buffalo Chicken and Quinoa recipe is that it’s man food paired with quinoa. Haha, am I right?!? All the taste of Buffalo Chicken Wings that is much healthier. So for all of my men readers or maybe you are trying to get your husband into quinoa, I bet this will be a hit. You can do several things with this dinner as well. I called it “taco night” for my kids, because as I have told you before, taco night is their favorite. They were served this wrapped in a tortilla, and they loved it. I like mine in a lettuce wrap. Or there is the simple throw it all into a bowl on top of some greens for a yummy salad.
The recipe is very simple to throw together. In the slow cooker, just add your quinoa, buffalo sauce, chicken broth, and chicken. You’ll want to set your slow cooker to HIGH, this helps the quinoa to cook. This is a meal prepared in only a few hours. You’ll then add your extras: chopped celery, chopped carrots, and green onions for garnish. If Blue cheese is your thing, add that too! DONE! How easy is that?!
- 1 cup uncooked quinoa
- 1 cup Buffalo Sauce
- 1 cup chicken broth
- 1/2 pound chicken breast
- 1 cup chopped carrots
- 1 cup chopped celery
- 1/4 cup green onion (optional)
- Crumbled Blue Cheese (optional)
- Romaine lettuce (optional)
- Place the first 3 ingredients into your slow cooker and stir to mix.
- Add the chicken.
- Cook on HIGH for 3-4 hours or until quinoa is fluffy and chicken is no longer pink.
- Shred the chicken with a fork.
- Serve in a bowl, in a tortilla, a lettuce wrap, or over salad.
- Add freshly chopped vegetables.
I am obsessed with this recipe. After I think I am done with my meal, I sneak back to the fridge to take a bite of the leftovers! SO good!
