Back with another Meal Plan + Grocery list for you all during your Whole30 journey! Remember, Whole30 or not, these are all delicious recipes that can be made on your healthy eating journey! These are also recipes I will be making this week as well. Many of the dinners are my kids’ favorites too! It makes Whole30 really easy if the whole family participates and enjoys it. You can always modify some of the recipes to give them other options (i.e. swapping in white or brown rice for cauliflower rice or using tortillas).
So let’s get right to it!
Breakfast:
Our breakfast recipe this week will be Eggs in Potato Nests. These individual cups are perfect to reheat all week. If you like runny eggs, make sure they are slightly undercooked so that when you re-heat throughout the week, they will be perfectly cooked. Top with guacamole or avocado to get additional fat and fiber in your breakfast!
Lunch:
This week’s lunch is Roasted Veggie and Cauliflower Rice Buddha Bowls. I love any way to get as many veggies as possible into my day. This one is the perfect light lunch recipe! For a protein, you can make Instant Pot Lemon Pepper Salmon, and use those filets on your bowls throughout the week. The dressing on this bowl will also be used for one of our dinners. Be sure to double the batch of dressing so that you only make it once!
Dinner:
First up, Beef Enchilada Bake with Avocado Cilantro Cream Sauce. This is the same sauce you will use for the Veggie Buddha Bowls above! I love this enchilada bake and it’s definitely a winner with my kids too. Bonus, you will also have leftovers for another dinner or for lunch.
It’s not a meal plan in the winter without a really yummy soup! Spicy Chicken Zoodle Soup is a twist on the classic chicken noodle with buffalo hot sauce, and zoodles in place of pasta. You can omit the buffalo sauce for just a traditional chicken soup. This recipe is really easy because you can use the Instant Pot, stovetop, or slow cooker! Serve with an easy side salad, this one is my go-to!
Creamy and Smoky Chipotle Pork Chops are a one pan, 20 minute dinner that is perfect for a busy weeknight! Serve over my Cilantro Lime Cauliflower Rice for a complete meal.
Thai Coconut Curry Turkey Meatballs have a creamy Thai curry sauce that everyone loves, and a homemade meatball recipe that so good! Serve over cooked spaghetti squash.
Another winner dinner is this Bacon Ranch Chicken and Broccoli Casserole. I can eat this plain, but you can also serve over greens, with cauliflower rice, or with potatoes.
