Instant Pot BBQ Ranch Chicken

The combination of a BBQ + Ranch makes for a delicious and simple flavorful chicken! Set it and forget it with this super easy dinner that requires less than 5 minutes of prep time.

Ingredients 

  • 2 lbs chicken breast or chicken thighs
  • 2 tsp smoked paprika
  • 1 tsp chipotle chili powder
  • 1.5 cups BBQ Sauce, divided
  • 2/3 cup Beer*, (or chicken broth)
  • 1/2 cup ranch dressing
  • 1/4 cup freshly chopped cilantro, for serving
  • 1/3 cup diced red onion, for serving
  • 2 cups chopped fresh cabbage, for serving

Instructions 

  • In the Instant Pot, combine chicken, paprika, chipotle chili powder, 1/2 cup BBQ sauce, and beer. Give it a stir and secure the lid.
  • Cook at high pressure for 8 minutes, use a quick release. Once steam is completely released, remove chicken from the pot and shred with a fork. Place chicken back into the pot. If the sauce is really thin, add in 1 tbsp arrowroot starch.
  • In a bowl, stir together remaining 1 cup BBQ sauce and the ranch dressing. Pour on top of the chicken and stir.
  • Serve hot in a bowl of greens with toppings: cilantro, onion, cabbage. Or serve in bun as a sandwich with toppings.

Notes

*I use a lager beer for this recipe. A darker beer will provide a bit more flavor. You can also use chicken broth in it’s place.

    I’m curious about the beer, this recipe says is GF, so does cooking the beer kill/remove the gluten?

      No, the gluten is not cooked out. You have to use the chicken broth or a GF beer to make it GF.
